Work out first whether the cart carries the grill or stands beside it, because that single decision changes every other requirement. A cart supporting a tabletop grill or a griddle needs a top rated for that weight and a height that puts the cooking surface at a comfortable 34 to 36 inches once the grill is on it; a cart used purely for prep beside a full-size grill should instead match the height of the grill's own side shelf so plates and trays slide across. Then look hard at the worktop, since a seamless welded stainless surface wipes clean and takes a hot pan, while a top assembled from panels traps grease in the joins and a painted steel top chips and then rusts from the chip outward. Casters are the difference between a cart and a table, and the details are whether at least two lock, and whether the wheels are large enough to cross a patio joint or a lawn edge rather than jamming on it. Shelf load ratings are worth checking if you plan to store a full propane tank or a cast iron collection underneath. Then consider the small conveniences that get used daily, a trash bag holder, tool hooks, a paper towel bar, and check for a powder-coated frame if the cart lives outside year round.
